Ingredients
- 650 g chicken breast
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 2 cloves garlic (minced)
- 1 tsp paprika (optional)
- 0.25 tsp black pepper (optional)
- 600 g rice (cooked)
- 600 ml Water (for cooking rice)
- 250 g carrot (sliced and steamed)
- 300 g broccoli (cut into florets and steamed)
- 80 g yogurt (plain for serving) (optional)
Instructions
1. Pat the chicken breasts dry and rub them with olive oil, lemon juice, garlic, paprika, and black pepper.
2. Let them stand for 10 minutes while you prepare the sides.
3. Cook the rice in water until tender and fluffy.
4. Steam or simmer the carrot and broccoli until soft but still bright.
5. Heat a grill pan or skillet over medium heat and cook the chicken for 5 to 7 minutes per side, depending on thickness, until fully cooked through.
6. Rest the chicken for 5 minutes, then slice it across the grain.
7. Serve with rice and vegetables, adding a small spoon of yogurt on the side if desired.
