Tomato Vegetable Pasta

A mild everyday pasta with tomato sauce, zucchini, carrot, onion, and a little cheese. It is a practical family lunch or dinner that can be served with extra vegetables on the side.

Ingredients

  • 320 g pasta (dry)
  • 2 tbsp olive oil
  • 100 g onion (diced)
  • 120 g carrot (finely diced)
  • 2 cloves garlic (minced)
  • 200 g zucchini (diced)
  • 500 g tomato (chopped)
  • 100 ml Water (pasta cooking water as needed) (optional)
  • 60 g cheese (grated) (optional)

Instructions

1. Cook the pasta in boiling water until tender, then drain and reserve a little cooking water. 2. Heat olive oil in a saucepan over medium heat, add onion and carrot, and cook for 5 minutes until softened. 3. Add garlic and zucchini and cook for 3 minutes more. 4. Stir in tomato, reduce the heat, and simmer for 12 to 15 minutes until the vegetables are soft and the sauce thickens. 5. Add the pasta to the sauce with a splash of reserved cooking water and toss until coated. 6. Stir in cheese or sprinkle it over each serving.
